Aunt Chong's Grilled Bulgogi

Comments: This recipe comes from Kim Heckman Leonard's Aunt Chong. I've modified it slightly -- Aunt Chong didn't use chili-garlic sauce and used more oil and salt than I did. However, the addition of whole, toasted sesame seeds is definitely genius and comes from the original recipe.

 

Ingredients:

  • 1/2 cup sesame seeds
  • 1 cup soy sauce or tamari
  • 1 cup brown sugar
  • 2 tablespoons rice vinegar
  • 2 tablespoons chili-garlic sauce
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 1/2 cup vegetable oil
  • 2 pounds skirt steak, cut across the grain into long strips about 2 inches wide

Instructions:

In a small skillet, heat the sesame seeds over medium-high heat, stirring occasionally, until toasted. Set aside.

Mix the next 7 ingredients (soy sauce through vegetable oil) in a large container. Add the sesame seeds and skirt steak and stir to evenly coat the meat in sesame seeds and marinade.

Cover the container and marinate in the refrigerator, stirring the mixture occasionally, for about 8 hours.

Heat grill to high. Lightly oil grates. Place meat on the grill and lower the temperature to medium-low. Cook, turning once, until meat has reached desired doneness.
