Balsamic-Marinated Grilled Beef Tenderloin

Ingredients:
- 1/4 cup balsamic vinegar
- 1/4 cup dry red wine
- 2 tablespoons olive oil
- 1 shallot, chopped
- 1/4 cup fresh sage
- 1/4 cup fresh rosemary
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 pound center-cut beef tenderloin, trimmed of fat
Instructions:
Place the first 8 ingredients (vinegar through black pepper) in a blender. Puree until mostly smooth.
Cut the meat into serving-sized medallions.
Place the meat in a glass baking dish. Pour the marinade over the tenderloin. Cover and refrigerate over night, turning the medallions at least once during marination.
Bring the tenderloin to room temperature; scrape marinade off the meat.
Grill the meat over a medium to medium-hot flame, turning occasionally, until the meat reaches the desired level of doneness. Serve immediately.
