Easy Chipotle Sauce

Comments: This is an easy to make hot sauce that comes from "The Vegetarian Epicure."

 

Ingredients:

  • 4 dried chipotle chiles
  • 2 medium tomatoes
  • 1/2 large onion
  • 4 cloves garlic, peeled
  • 1/2 teaspoon salt
  • 1/3 cup cilantro leaves, coarsely chopped
  • 1 tablespoon ground cumin

Instructions:

In a medium, non-stick skillet, pour enough hot water over the chiles to cover them. Let them soften for about 20 minutes. Take the chiles out and remove their stems; for a milder sauce, also remove as many seeds as you can. Return the chiles to the skillet with the water.

Chop the tomatoes and onion into large chunks. Add the tomatoes, onion, garlic, salt, cilantro, and cumin to the skillet. Add more water if needed, just enough to almost cover the vegetables. Simmer for about 30 minutes or until the vegetable are all soft. Puree mixture in a blender. Add additional salt to taste, if necessary.

Sauce will keep up to a week, refrigerated.
