Gingered Greens and Tofu
Serves : 4Comments: This makes a tasty one-course meal when served over brown rice.
Ingredients:
- 1/2 cup low sodium soy sauce
- 1/2 cup dry sherry
- 1/4 cup rice vinegar
- 3 tablespoons brown sugar
- 12 ounces firm tofu, diced
- 3 tablespoons roasted peanut or sesame oil
- 2 tablespoons grated ginger root
- 1 (16 ounce) package fresh spinach, shredded
- 3 tablespoons fresh lime juice
- 1 teaspoon dried red pepper flakes
Instructions:
In a small bowl, combine the first four ingredients.
Heat the oil in a wok or large skillet. Stir in the ginger, and then add the soy mixture. Bring to a boil and reduce heat slightly. Add the tofu and cook for about two minutes, stirring occasionally, or until the tofu is thoroughly heated. Add the spinach, lime juice, and red pepper, stirring constantly, until spinach just starts to wilt. Remove from heat and serve immediately.
