Latkes

Ingredients:

  • 2 large russet potatoes
  • 1 medium onion
  • 1 large egg, lightly beaten
  • 4 tablespoons bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • cooking oil

Instructions:

Grate the potatoes and onion using a large-holed grater. Place grated onions and potatoes in a large dish towel and wring out as much liquid as you can. (You can also just squeeze handfuls at a time in your bare hands, just don't skip this step. It's key.)

In a large bowl, mix dry ingredients thoroughly. Add the grated potato and onion mixture and the egg to the dry ingredients and mix well.

Heat oil over medium heat in a large frying pan. When oil is hot, drop large spoonfuls of latke mix into pan and immediately flatten latkes with a spatula. Fry until brown and crispy, about 8 to 12 minutes per side, turning only once.
