Marinated Tofu with Ginger

Ingredients:

  • 2 (12-ounce) containers water-packed extra-firm tofu
  • 2/3 cup tamari or regular soy sauce
  • 1/4 cup rice vinegar
  • 1/4 cup toasted sesame oil
  • 1 tablespoon minced garlic
  • 1 tablespoon minced peeled fresh ginger

Instructions:

Drain the tofu and cut into 1-inch thick slices. Place tofu slices on several layers of paper towels; cover with additional paper towels. Let stand 30 minutes, pressing down occasionally, and changing the paper towels after 15 minutes.

Whisk the tamari, vinegar, sesame oil, garlic, and ginger in a bowl to blend. Pour a little of the marinade into a storage container or dish. Place the tofu slices in the container, and pour on additional marinade. If you need to stack the tofu slices, just be sure to alternate with marinade, finishing by pouring marinade over the top.

Cover and refrigerate at least 4 hours and up to 1 day; gently agitate the marinating tofu from time to time.

Place the marinated tofu on a baking sheet and turn on the broiler. Place the tofu 4 or 5 inches under the heat and broil until the top is bubbling and the tofu is heated through, 7 to 10 minutes.
