Meatballs

Serves : 4-6

Description: These are great to use for spaghetti and meatballs, for meatball sandwiches, and even as a gyro-type filling in a pita with tzatziki, chopped onions, and chopped tomatoes. I recognize the irony of using matzo meal in a recipe calling for ground pork (and using milk + meat, as well), but it really worked well.

 

Ingredients:

  • 1/2 cup matzo meal (or plain, finely ground breadcrumbs)
  • 1/2 cup milk
  • 4 cloves garlic, finely minced
  • 1 pound ground beef
  • 1 pound ground pork
  • 1 1/2 teaspoons salt
  • Some generous grinds of freshly ground pepper
  • 1 egg, lightly beaten

Instructions:

Preheat the oven to 375 degrees.

In a medium-sized bowl, add the milk to the breadcrumbs and mix until the milk is absorbed. Let stand a minute or two, then add the remaining ingredients. Using your hands, mix together until well combined. Shape the mixture into meatballs about 1 1/2 inches in diameter. Place the meatballs on a rimmed baking sheet about an inch or two apart. Roast the meatballs at 375 degrees, shaking occasionally, until they are nicely browned, about 20 to 30 minutes.
