Poached Salmon with Green Goddess Dressing

Ingredients:

  • 1 small onion, sliced
  • 1 medium carrot, chopped
  • 6 whole black peppercorns
  • 2 bay leaves
  • 1/2 cup dry white wine
  • 4 (6 ounce) salmon fillets
  • Green Goddess Dressing

Instructions:

Place the onions, carrots, peppercorns, bay leaves, and wine in a medium to large skillet.

Add enough water to come 1 1/2 inches up side of skillet. Bring to a boil; reduce heat, and simmer 15 minutes.

Place the salmon fillets in the skillet, skin-side down. Cover; simmer 5 minutes.

Remove from heat, let stand until fillets are opaque, 8 to 10 minutes. Serve warm or chilled with dressing.
