Reuben Sandwiches

Serves : 6

Description: This recipe assumes you have a panini maker. Alternately, you could cook the sandwiches in a heavy skillet, weighting the sandwiches down with something as you cook them.

 

Ingredients:

  • 3/4 cups mayonnaise
  • 1/4 cup chili sauce
  • 2 tablespoons sour cream
  • 1 generous tablespoon minced dill pickle
  • 1/2 teaspoon fresh lemon juice
  • 1 generous teaspoon grated horseradish
  • 2 dashes Worcestershire sauce
  • 12 slices Jewish Rye Bread
  • 1 pound sliced cornbeef or pastrami
  • 12 ounces sauerkraut
  • 12 slices Swiss cheese

Instructions:

In a medium bowl, mix together the first 7 ingredients (mayonnaise through Worcestershire sauce) to make the Russian dressing.

Spread each slice of bread with Russian dressing. Layer half of the slices with a slide of cheese, the corned beef (or pastrami), sauerkraut, and then a second slie of Swiss cheese. Top the sandwiches with the remaining slices of bread (dressing-side down, of course).

Cook the sandwiches in your panini maker until bread is golden and crisp and cheese is melted. (This takes about 2 minutes 30 seconds in my panini maker.) Serve immediately.
