Sweet and Salty, Fruit and Nut Granola

Serves : 7-10
 

Ingredients:

  • 3 cups old-fashioned rolled oats
  • 1 cup walnuts, coarsely chopped
  • 1 cup raw slivered almonds
  • 1 1/4 cup raw pecans, coarsely chopped
  • 1 cup coconut chips
  • 3/4 cup pure maple syrup, preferably grade B
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup packed light-brown sugar
  • Coarse salt
  • 2 cups dried fruit, such as dried cranberries or chopped dried apricots

Instructions:

Preheat oven to 300 degrees.

Place oats, walnuts, almonds, pecans, coconut, syrup, olive oil, brown sugar, and 1 teaspoon salt in a large bowl and mix until well combined. Spread granola mixture in an even layer on a large rimmed baking sheet. Transfer to oven and bake, stirring every 10 minutes, until granola is toasted, about 40-50 minutes.

Remove granola from oven and season with additional salt to taste. Let cool completely and stir in the dried fruit.

Granola will keep stored in an airtight container for 3 weeks.
