The Limey Bastard

Comments: I was given a jar of Salt-Preserved Rangpur Limes and came up with this refreshing cocktail, with the help of my husband, Ketan Dalal, and my friends Max McMullen, Paul Gusmorino, and Dave Matthews. A jar of the salt-preserved limes should make at least 20 drinks. The limes are pre-cut into wedges.

 

Ingredients:

  • 1 wedge salt-preserved Rangpur lime (see comment above)
  • 6 mint leaves
  • 1 ounce rum
  • 4 ounces San Pelligrino Limonata soda

Instructions:

Place the Rangpur lime wedge and the mint leaves in the bottom of an Old-Fashioned (i.e. short) cocktail glass. Muddle them together, then add the rum and Limonata. Add ice and serve immediately.
