Turkey-Veggie Meatballs
Serves : 5Comments: These are better if you make the meatballs a day or two ahead of time and then cook them right before you serve them. Also, make sure to use good parmesan cheese.
Ingredients:
- 1 1/2 pounds ground turkey
- 1/2 cup dry bread crumbs
- 1/2 cup finely shredded fresh Parmesan cheese
- 1/3 cup finely chopped green onions
- 1/4 cup coarsely shredded carrot
- 1/4 cup coarsely shredded zucchini
- 1/4 teaspoon (heaping) salt
- 1/4 teaspoon (heaping) pepper
- 1 large egg white
- 2 large garlic cloves, crushed
- Vegetable cooking spray
Instructions:
Combine all ingredients except cooking spray in a large bowl; stir well. Shape mixture into 30 (1 1/2 inch) meatballs. (One serving is 5 meatballs.)
When ready to cook meatballs, preheat oven to 400 degrees. Place meatballs on a broiler pan coated with cooking spray. Bake at 400 degrees for 15 minutes or until done.
