Vietnamese-Inspired Steak Sandwiches

Comments: This recipe is adapted from a similar one in Martha Stewart's "Everyday Food." If your grocery store sells carrots that have already been julienned or grated for slaw, save yourself some time and use those instead of grating the carrots yourself. Also, if you don't like cilantro, substitute basil instead.

 

Ingredients:

  • 1 large garlic clove, minced
  • 1 teaspoon sugar
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon rice vinegar
  • 1 tablespoon water
  • 2 carrots, grated
  • 2 scallions, thinly sliced
  • 1/2 cup cilantro (or basil) leaves
  • 4 sandwich rolls
  • 1 pound {Flank Steak with Lime Marinade} or {Wasabi-Miso Marinated Flank Steak}, thinly sliced
  • mayonnaise

Instructions:

In a small bowl, stir the garlic, sugar, red pepper, vinegar, and water until combined.

In another bowl, toss together the carrots, scallions, and cilantro leaves. Add half the vinegar mixture and toss until thoroughly combined.

Split and lightly toast the sandwich rolls. Divide the carrot mixture evenly among the 4 rolls, creating an even layer on the bottom half of each roll. Next, evenly divide the flank steak, laying the slices on top of the carrot mixture. Finally, spread a thin layer of mayonnaise on the top half of each roll.

Serve the sandwiches with the extra vinegar mixture on the side for those who want it.
